sonder's place

this is what i like to keep in my kitchen. it would be good if you wanted an idea of what to keep to be surviving if you were cooking for yourself or for me, if i need to rebuild my stock for the millionth time

dry stock: rice is my favorite base grain, so: short grain brown rice, nishiki rice, jasmine rice, basmati rice, orzo, another base pasta of some kind (i don't eat pasta often but switching it up is good for your brain sometimes), buckwheat soba, noodles for pho, tteokbokki (you should always have the means to make tteokbokki), curry paste, canned chickpeas, pinto beans, black beans, coconut milk, flour, sugar, brown sugar (you're gonna be like, i don't need sugar, it's bad for me, i don't use it etc. YOU NEED SUGAR it's an essential seasoning in many dishes and you're gonna look a fool when you need like 1 tsp in a sauce. i don't like sugar very much personally but it's needed in small amounts for some flavors) gluten free flour (i have a celiac loved one) xanthan gum (also good for gluten free baking), olive oil, avocado oil, grapeseed oil, coconut oil, CHICKEN BROTH (you need chicken broth), beef broth, vegetable broth, almonds, raisins, chia seeds, honey (preferably local and the best you can get, never skimp on honey)

spices: salt, pepper, garlic powder, onion powder, paprika, coriander, chinese five-spice, garam masala, turmeric, lemon pepper, cloves (whole), various noris, star anise, tajin, cumin, ginger, nutmeg, rosemary, thyme

fridge staples: oyster sauce, soy sauce, dark soy sauce hoisin sauce, the last few things i said but their gluten free versions, peanut butter, eggs, gochujang, chili oil, kimchi, kombucha, yogurt, oat milk, whole milk, cheese (use your wisdom- i like to keep around at least monterey jack, cheddar, mozarella- also good is parmesan and one thing you would consider fancy for morale, i like camembert)

produce rotation: strawberries, blueberries, raspberries, blackberries, avocado, sweet potatoes, kale, cucumbers, peppers, tomatoes, potatoes, carrots, broccoli, apples, and whatever's good, fresh, and local

freezer: chicken breasts, chicken thighs, whatever good local meat you can get your hands on, frozen vegetables for when yr too tired to shop or prep but still need a vegetables, frozen fruit for when it's hot, (specifically mangos), something cool like tamales or pork buns

tools: dutch oven, wok, omlette pan, deep pan, spatula, knives, cutting board, kitchenaid mixer, rolling pin, baking tray, reusable pan liner
